CORN IS AWESOME, corn is like the bacon of vegetables but contrary to popular belief, corn IS good for you. It contains tons of fiber and it is a good source of lutein and zeaxanthin, compounds that help keep your eyes healthy as you age.
This is a totally easy recipe and healthier than boiling corn and dipping it in butter. I use olive oil in stead of butter. I love olive oil and the result really tastes the same as butter. No one ever realizes that they’re eating corn with olive oil in stead of butter.
- Corn on the cob
- Olive oil
- Salt (we used truffle salt today)
- tin foil
Make “boats” of pieces of tin foil that are large enough to hold fold a cob in loosely. Put a cob in a ‘boat’ and add olive oil and salt.
Put them on the BGE (or any other BBQ in this case) at about 350/400f and let them sit on there for like 10 minutes or so.
And then, 10 minutes later!!
